I know that "moshi moshi" is used when answering the telephone, but what is the literal translation?

I believe it's 申し申し which is something like "speaking, speaking"

Here is a great explanation of what Moshi Moshi is all about. http://gakuranman.com/why-say-moshi-moshi-twice/

It's not only used when answering the phone, but also when it appears your conversation partner is no longer listening to you. In that situation it's kind of like "hellooooooooo"
